TACO SOUP


 

Ingredients

  • 1-1/2 pounds ground beef OR chicken
  • 2 Tbls taco seasoning
  • 1 onion chopped
  • 2 Tbls minced garlic cloves
  • 2 cans (15-1/4 ounces each) whole kernel corn, undrained
  • 2 cans (15 ounces each) Black Beans (pinto beans in seasoned tomato sauce)
  • 1 can Rotel Tomato Original w/Chilies
  • 1/4 bunch fresh cilantro 
  • 1 can cut green beans (optional)
Serve with:
  • Tortilla chips and shredded cheddar cheese, green onion garnish and sour cream
 Directions
  • In a Dutch oven, cook beef over medium heat until no longer pink; drain. Stir in the taco seasoning, onion, garlic, corn, beans and tomatoes and cilantro. Cover and simmer for 15 minutes or until heated through, stirring occasionally.
  • Serve with tortillas, cheese, green onion and sour cream.
. Yield: 8 servings (about 2 quarts).
