Ingredients
- 1-1/2 pounds ground beef OR chicken
- 2 Tbls taco seasoning
- 1 onion chopped
- 2 Tbls minced garlic cloves
- 2 cans (15-1/4 ounces each) whole kernel corn, undrained
- 2 cans (15 ounces each) Black Beans (pinto beans in seasoned tomato sauce)
- 1 can Rotel Tomato Original w/Chilies
- 1/4 bunch fresh cilantro
- 1 can cut green beans (optional)
Serve with:
- Tortilla chips and shredded cheddar cheese, green onion garnish and sour cream
Directions
- In a Dutch oven, cook beef over medium heat until no longer pink; drain. Stir in the taco seasoning, onion, garlic, corn, beans and tomatoes and cilantro. Cover and simmer for 15 minutes or until heated through, stirring occasionally.
- Serve with tortillas, cheese, green onion and sour cream.
